Coffee cupping is a practice in which coffee professionals taste coffees side by side and evaluate them based on categories like fragrance, aroma, flavor, mouthfeel and acidity.
Cupping can be used at any level of the seed-to-cup process; at origin on coffee farms to determine quality, at roasters to determine purchasing decisions or at coffee shops by baristas to evaluate ideal brew methods. In this way, people throughout the coffee industry can compare coffees in the exact same way.
